The Artichokes, commonly known as the French or Globe artichoke to distinguish it from the fantastic but completely different root vegetable known as the Jerusalem artichoke, is a vegetable related to the daisy. It has been the official vegetable of California since 2013, when it defeated avocados in a poll of radio station listeners.  The artichoke, which originated from inedible thistles, is the result of long and intensive cultivation that has resulted in not only a delectable but also an exceedingly nutritious cuisine.

The Artichokes is a perennial plant native to the Mediterranean region, which produces 90% of the world's harvest (mostly in Spain and Italy). California produces 99.99% of the domestic crop in the United States. The majority of artichokes are green, but some are purple. Baby artichokes are smaller and more sensitive than their adult counterparts.  The meat of the green petals, the centre of the stem, and the inner artichoke heart are the only parts of the plant that are actually edible. Trying to eat the thistly piece of the veggie in the centre might truly put the "choke" in artichoke.
