Homemade Healthy desserts
Mint Chocolate Chip Ice Cream
This recipe of Mint Chocolate Chip Ice Cream is gluten-free, dairy-free, and vegan. A lot of people have mixed feelings about this ice cream. While some people claim it tastes like toothpaste, others adore the flavor. What do you think? Are you team Mint Chocolate?
For this recipe, we’ll need 2 frozen overripe bananas, a pinch of salt, peppermint extract (as desired, but we suggest 1/8), food coloring, a pinch of spirulina, and 2-3 tablespoons of chocolate chips. Blend these together till smooth. Add the chocolate chips before/after the blending is done. This goes extremely well with a coconut whipped cream topping, but if you are not fond of this, then you can opt for normal whipped cream too!
If you’re not lactose intolerant or vegan, you can use whole milk, sugar, heavy cream, pure peppermint extract, and semi-sweet chocolate chips instead of the ingredients listed above. Additionally, if you have an ice cream maker, you can use it to make this ice cream.
Chocolate Ice Cream
Nearly everyone enjoys this. It is rich, chocolatey, and healthy! You can make your own homemade ice cream too. For chocolate ice cream, the ingredients include 3 frozen bananas, cocoa powder (we suggest ⅓), peanut or almond butter (2- 3 tablespoons optional), a pinch of salt, and broken pieces of dark chocolate bar or chips. Using overripe frozen bananas is a great option. Blend all these ingredients together till smooth and add the milk of your choice (we suggest coconut/ almond milk) if it is too thick.
Alternate ingredients are cream: 20-25% fat cream (about 2 cups), whole milk (¼ cup), cocoa powder (½ cup), sweetened condensed milk (½ cup), brown sugar (½ cup), and 1 teaspoon of vanilla extract. Everything tastes better with whipped cream so you can add that too if you like.
Rolled Ice cream
Recently, these rolled ice creams have become an internet sensation. It appeared to be well-liked and everyone was astounded by how delicious it was. If you are not aware of what rolled ice cream is, then let us explain it to you. It is essentially ice cream that is thinly spread on a metal surface and then carefully scraped off in a spiral shape. Ingredients to make this are 1 cup of cream (240 ml) and condensed milk ( 150 grams). For mix-ins, we are making strawberry and Nutella rolled ice cream. You can use any other mix if you desire. For the strawberry recipe, you will need 3 diced strawberries, crushed graham crackers (2 tablespoons), and 2 tablespoons of cream cheese. For the chocolate recipe, all we will need is 2 tablespoons of Nutella.
To start, we will add the cream and condensed milk to a large metal baking tray and mix. For the strawberry one, we will mix in cream cheese, graham crackers, and strawberries. For the Nutella one, add the Nutella to the ice cream base and mix it until evenly distributed. Once mixed, place the tray of ice cream flat in the freezer and freeze solid for a minimum of five hours (overnight is fine too). When you are ready to serve, take out the frozen tray from the freezer and place it on a flat surface covered with a tea towel (using the tea towel will secure the tray when rolling).
Before the ice cream starts melting, quickly scrape the ice cream using a spatula rolling it to form a spiral shape. Place four of these in a container of choice and top it with whipped cream or topping of your choice. There you go, your homemade rolled ice cream is ready!
Mochi Ice Cream
Mochi Ice Cream is an amazing Japanese dessert. It consists of ice cream inside and chewy mochi on the outside. It only takes a few minutes to prepare, and you can use any flavor of chocolate ice cream you want. You can even use the recipes above to make your own homemade ice cream. Mochi is made from glutinous rice flour pounded into a rice cake eaten especially around the Japanese New Year.
To make the mochi take sweet rice flour, sugar, and water in a large microwavable bowl and cover it with plastic wrap. Put this in the microwave for a minute. Stir the rice flour mixture to get rid of any lumps. Then microwave this again for a minute. Stir the mixture with a rubber spatula that has been dampened. Mix in some color dye if you wish, cover the mixture, and microwave for 30 seconds. Place parchment paper on the counter and cover it with sufficient cornstarch or potato starch. With the help of a wet spatula scrape the dough out of the bowl onto the dusted surface. Dust the dough with more cornstarch/ potato starch.
Making of Mochi Ice Cream
Roll the dough into a rectangular shape. To prevent the dough from sticking, keep sprinkling flour on the top and bottom of the dough. Transfer this onto a cookie sheet and set it in the refrigerator. After the dough has been set, use a cookie cutter to cut circles. If you don’t have cookie cutters then a glass rim would work just fine. Pick up one dough circle, take one scoop of ice cream, form it into a ball and squeeze it shut. To help keep its shape, wrap the mochi ice cream ball in a cling wrap and place them seam down in the freezer to set. Allow the mochi to freeze for at least 2 hours. When you are ready to serve, let the mochi ice cream sit for a few minutes to soften it.
